I'm just wondering how hard I should try to get the challenges that aren't really in my level range... how long does the event last? Do the points stay until the next one, or does it reset every time?

The events usually last until the next major patch so 1-2 weeks, all the event points will stay after it ends and sum up to to points you'll get from future events.
